

Our Story
My name is Henry F. Sanchez, and I have over 35 years of experience as a professional chef.
My passion for food began at The Culinary Institute of America in upstate New York and continued to grow through leadership roles as an executive chef at renowned establishments including Gallagher’s Steakhouse in New York City, Smith & Wollensky in Miami Beach, Taste in New Jersey, and many others.
While living in Miami, I had the opportunity to deepen my appreciation for Caribbean cuisine—its bold flavors, cultural roots, and vibrant energy. That curiosity eventually led me into the food truck world, where I met incredible people and immersed myself in a new way of sharing food with the community.
That journey became Cubano X-Press. What started as exploration turned into a passion project, and now a business—one I hope you’ll fall in love with as much as I have, through every bite inspired by the flavors of the Caribbean.


Our Team
My sidekick is Brenda Rosa.
The only thing we disagree on is football. She’s a die-hard New England Patriots fan (thankfully, Tom Brady and Bill Belichick are retired… though now they have Drake Maye).
I’m a lifelong New York Jets fan. Someday—someday—we’ll make it to the Super Bowl. It just doesn’t look like this is our year.
